1. Wolgan Valley

You won’t find wi-fi here, in fact, your phone won’t even work. And you don’t need it to. At One & Only Wolgan Valley you’ll be in a villa with your own private heated pool, views of the remote valley escarpment, a rocking chair on the front porch, a four poster bed, a fireplace, and a roll-top bath. And we haven’t even started on the food and wine options. Wolgan Valley has plenty of activities, but some of the best is to sit and contemplate the world and connect with loved ones while taking in the glory of the Australian bush.

2. Bannisters by the Sea

The view at Bannisters by the Sea is the drawcard, and pulling back the curtain is the first order of the day. There, the reveal delivers a deck, sun loungers and a large hot tub, some bush scrub vista as well as the sea. The hot tub rooms are on the lower level, so upper has a higher view, but the hot tub is a welcome addition in winter. The style here is beach casual, low-key and unpretentious. It’s Australian service with no handholding. The restaurant is a destination in its own right, being Rick Stein’s only Australian property.

3. Paperbark Camp

Paperbark Camp is found near the striking white beaches of Jervis Bay, is a real return to nature. Surrounded by shrub and paperbark trees - the bark you pulled off and wrote on as a kid - it is symbolic of unpretentious bush luxury. The bathroom is a real standout, with no walls but the open air, and a bath tub and corrugated tin curved shower cubicle to boot.
